Our Story

    THE JOURNEY OF A POLYMATH

William Woodland, also known as “Woody” is a man of many talents. Born and raised in Austin, Texas, Woody first developed his language of love for food under the wing of his Nana.

From a young age, Woody has always had an affinity for math and computer science; and in later years, the physics behind cooking. His core focus was developing the computer tracking systems for the State of Texas. Woody decided to pursue a career in culinary arts. With over two decades of experience in the restaurant industry, Woody has a steadfast commitment to quality and efficiency

After leaving his job as a butcher and purchased a bare metal trailer frame, no tires, title/vin… not even flooring.

During the next three and a half years, Woody would learn hands-on carpentry/framing, and many of the skills including welding, metal working, plumbing and electrical knowledge to build his own kitchen-on-wheels.

He bartering jobs of all types for much of the equipment from businesses closing down in Austin during the pandemic.

    LAUNCH

In March of 2022, the concept of Born and Braised finally launched, A food trailer focusing on slow cooked Wild Game Meats and fire roasted Native Seasonal Vegetarian Options. Born and Braised has consistently grown a reputation for their unique and flavorful food.

Despite his achievements, Woody remains humble and grounded, always maintaining a positive attitude. Whether he’s cooking, repairing kitchen equipment for others, or helping with the efficiency of friends’ businesses, he is always there to help those in need.

Using seasonal produce and continually listening to the wants and opinions of his guests has allowed him to maintain the freshest of foods while keeping everyone smiling. Overall, Woody is a talented chef and entrepreneur who is dedicated to creating high-quality food experiences and supporting his local community.

    THE GRIND

Woody’s success has not come without challenges. He admits that he has made many mistakes along the way, but views those moments as learning opportunities. He credits his success to his ability to stay focused, remain positive, and never give up. His passion and love for people is a daily inspiration to many in the Austin area; proving that hard work, dedication, and a positive attitude can lead to great success.

Currently grinding off “SoCo” @sagebrushtexas located at 5500 S. Congress Ave; a great South Austin Honky Tonk with LIVE MUSIC every night. Woody’s advice to aspiring entrepreneurs is to “never stop learning” and to always be willing to take risks. He encourages young entrepreneurs to surround themselves with positive and supportive people who will help them achieve their goals.
